Peanut Chicken with Soba Noodles

Hey there y’all! So tonight I thought I would make something “out of the box”. A little Asian style food to warm the soul. Funny story, I was watching The Food Network, The Pioneer Woman, and my hubby, who hates most out-of-the-box foods says “I wanna try that chicken thing”! He was referring to the peanut chicken she was making, so here it is!


Ingredients:


For the marinade:
½ C water
¼ C veg. Oil
1/8 C soy sauce
¼ tsp ground ginger
1Tbsp chili garlic sauce
pinch of pepper
4 chicken breasts or 6-8 chicken tenders

For the peanut sauce:
½ C peanut butter
4 Tbsp soy sauce
pinch of lime zest
pinch of ground ginger
1tsp rice vinegar
¼ tsp garlic powder
Hot water.

For the Sauce ( for soba noodles)
½ Cup water
1/8 Cup soy sauce
1 tsp Chili garlic sauce
1 tsp rice vinegar
½ tsp brown sugar
¼ cup water
2tsp corn starch
1 pkg Soba noodles.

what to do:

Combine all marinade ingredients. Cut breasts into ½ inch strips or leave tenders whole and marinate in a gallon size ziplock for 1 hr. Grill or Bake at 350F for about 20 min or meat is completely cooked.




For the Sauce: In a blender combine all ingredients except the water. Blend and add hot water a little at a time until you have the desired consistency. Drizzle over cooked hot chicken.

For the Soba Noodles: sauce: Combine 1st set of water, soy sauce, chili sauce, vinegar, and brown sugar. Bring to a boil. Combine ¼ cup water and the corn starch. Add to the boiling sauce and stir until thick. Remove from heat. Noodles: put in a pot of boiling water until they come apart. Drain and transfer to a hot pan and add as much sauce as you like. Cook sauce into noodles, about 5-7 min.

Baked Salmon Bowl

Hey there! Another rainy day here in Oregon. So today I wanted decided to make something a little more healthy. My friend Ashley loves this kind of food and she was more than happy to be the taste tester on this one! Luckily my little man (5 month old son) was in a good mood and let me get thru this pain free! Anyways, this will leave you feeling full AND satisfied. If you don't care for salmon you can always use chicken or no meat at all!


Here is what you need:


For the bowl
1 Cup Rice: (I used minute rice, although you can use jasmine rice, brown rice or quinoa)
1 Cup water
___________________________________
1 Salmon fillet
1 tsp chili garlic sauce
1 Tbsp soy sauce
3 Tbsp water
pinch pepper
__________________________________
5 stalks of Asparagus
½ Avocado sliced
½ red bell pepper, cut in thin strips
1 egg
Green onion for garnish
____________________________________

For the Sauce:
½ Cup water
1/8 Cup soy sauce
1 tsp Chili garlic sauce
1 tsp rice vinegar
½ tsp brown sugar
¼ cup water
2tsp corn starch



Here's what to do:

In a small pot, add water and bring to a boil, then turn off heat and stir in rice. Cover and let sit.
In a bowl combine chili sauce, soy sauce, and water. Pour over salmon fillet and bake at 350 F for about 15 min or until fish is firm.
In a pot of simmering water blanch asparagus and red bell peppers for about 2 min. Take out and set aside.
For the sauce, combine 1st set of water, soy sauce, chili sauce, vinegar, and brown sugar. Bring to a boil. Combine ¼ cup water and the corn starch. Add to the boiling sauce and stir until thick. Remove from heat.
For the egg, cook in a fry pan sunny side up style.
To Build the dish put a generous amount of rice in the bowl. Top with the salmon, asparagus, bell peppers, avocado, and egg.

Sprinkle with pepper and garnish with green onion. ENJOY!!!
