Sweet Potato Breakfast Hash

Hungry? you will be after you read this one! i have made a delicious easy breakfast dish sure to please... most everyone! I made this dish this morning for breakfast and was left completely satisfied!




Here is what you'll need:

  •  1/2 Small Sweet Potato
  • 1/2 Small Yam
  • Handful of mushrooms
  • 1 green onion
  • 1 egg
  • 2 Tbsp butter
  • 1/2 avocado
  • 1 Tbsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  •  1 tsp vinegar

 What you need to do: 

 Dice up both potatoes and microwave for 4-5 min until tender. Add butter to pan and melt Then add mushrooms, cooked potatoes and spices to hot pan. Cook until potatoes have gained a good golden color. In a separate pot, simmer water and add vinegar. Poach egg for 3 or so minutes or until it has reached desired done-ness. plate potatoes and mushrooms, top with poached egg and garnish with green onion and a sprinkle of paprika.

Chocolate Naked Cake

Hello there all! Hope you all had a wonderful thanksgiving! So i thought for this post i wanted to do a little something different and do a naked cake. In the middle of laundry, taking care of my 4 month old, house cleaning and doggy care, i decided to do something new for me and i think you will like it. this recipe can be used for a normal cake as well! I have use this cake recipe for about 6 years now.

Here is what you will need...

Cake:   

  • 2 C Flour
  • 2 C Sugar 
  • 2 tsp baking powder
  • 1/2 Tbsp baking soda
  • 3/4 Cocoa powder
  • 1 C milk
  • 1 C water
  • 1/2 C oil
  • 2 eggs

Frosting:

  • 1 Stick softened unsalted Butter
  • 1 8oz Package softened Cream cheese
  • 3/4 C powder sugar
  • 2 tsp vanilla


What To Do

For the cake: pre-heat to 350 F 

Combine all the dry ingredients in a large bowl. In a separate bowl combine the wet ingredients. Combine and whisk well so you don't have lumps of flour or cocoa powder. Pour into a greased sheet pan and bake T 350 F for about 30 min or until a tooth pick is inserted and comes out clean. Cake will have a spongy feel. Cool and cut out into size circles you prefer.

For the Frosting

Combine the cream cheese and butter and whip until fluffy about 2 min. Scrape sides and add powder sugar and vanilla. Mix another 2 min. 
 
Decorate how you please. use your imagination and be creative!

Hello there from rainy Oregon! its this girls first blog post ever! So excited to share my love and passion of food with you all! For my first post I am going to share my French apple tart. Simple ingredients and a few short steps and you will have a dessert for the holidays to impress all your friends and family.

Here is what you will need! 

French Apple Tart

1 Roll of pre made pie crust
2 tsp butter (melted)
1/4 C sugar
1/2 tsp cinnamon
3-4 medium size apples
2 1/2 tbsp. honey
1/2 tsp vanilla
 

Directions

  • Pre-heat oven to 425 F
  •  combine cinnamon and sugar. 
  • Roll out dough on a slightly floured surface and place in a pan sprayed tart pan. brush the melted butter and sprinkle 2 tsp of the sugar mixture onto dough.
  • Thinly slice the apples. Based on preference,  peel the apples first. I did not peel as I like the texture contrast.
  • Combine rest of sugar mixture with sliced apples and toss. place apples in a layered patter.
  • Bake at 425 for about 30 min.
  •  combine the honey and vanilla and drizzle it over the warm tart.
  • serve warm
